It is officially Fall as of this week, and you know what that means! You are about to see an abundance of pumpkin spice flavored food everywhere you look; from coffee to cookies to ice cream. But, if you are looking for a good old fashioned, simple pumpkin spice cake with cream cheese frosting, you have come to the right place. Not to mention they are shaped like adorable little pumpkins! Picture this: You are a kid again, and it's a hot summer day, you just got done playing outside or getting out of the pool and now you're hungry. So in that moment, what was arguably one of the best snacks you could receive? ICE CREAM obviously! Whether it was in the form of a sundae, milkshake, or popsicle! Now, I don't know about you, but one of my favorite ice cream treats as a kid were the strawberry sundae crunch bars that were sold at the pool or that your parents would bring home by the boxful. With its combination of chilled ice cream and sweet strawberry flavor, they were the perfect treat to hit the spot on any hot summer day.
Now, what would you say if you could get that same great combination, but in the form of a giant ice cream cake!? Well, look no further, because this cake has everything you could ever want in a summer dessert. It has ice cream, cake, a delicious strawberry flavor, and mimics both in appearance and flavor, one of the best tasting ice cream treats. No matter the age-group, this cake is sure to satisfy, especially on a hot summer day. What’s the first thing that comes to mind when you think about sitting around a campfire with friends or family during those warm summer nights? Well I can tell you what I think of…S’mores! So, I could not think of a better cake to make for this time of year. I have to say, after trying this cake, I’m not sure if I would rather sit outside around a campfire eating an actual s’more or a slice of this cake instead! With a graham cracker cake, marshmallow filling, chocolate buttercream, graham cracker crumble, and finally a chocolate ganache drizzle this cake is packed with flavor. By the time you finish it, you’ll be wanting S'MORE! (Cheesy I know but try it, and I am sure you will agree!)
If you want to save some time, an easy way to cut down on preparation is to buy canned chocolate frosting and a jar of marshmallow fluff from the store instead of making both from scratch. While the homemade version is delicious, you might be running low on time and looking for a quick fix instead!
